The Idźkowski family traces its roots to Żebry Idzki in the Masovian Voivodeship — one of the ancestral villages of the szlachta zagrodowa, the manor nobility. Centuries of tending the land instilled a deep appreciation for craftsmanship and patience.
Growing up between Silicon Valley's drive to innovate and Poland's millennium-old tradition of spirits, Przemysław saw how technology and craft could transform an industry — not just its products.
After years of research into the molecular chemistry of aging, he achieved what the industry had considered impossible: continuing the aging process after bottling.
His breakthrough — now protected by international patents — lets spirits keep evolving for decades, developing complexity and smoothness that traditional aging cannot reach.

Oak aging does two things: imparts flavor through tannins, and develops smoothness by converting harsh aldehydes into softer compounds.
For bourbon, whiskey, rum, and brandy, the barrel is the flavor. But tequila and mezcal are different — the beauty is in the agave itself: terroir-driven, herbal, mineral, earthy. Aggressive oak smothers what makes them extraordinary.
